AETNA

This $19.2 million dollar renovation of Aetna’s kitchen and servery included the design of a kitchen and serving area for a foodservice operation with a capacity to serve 7,200 employees and guests. In addition to serving the main cafeteria, the kitchen facility supports a conference center and other catering operations throughout the premises. Due to the sheer size of the facility, satellite café locations were added to the main venue as well.

The main servery’s design is an open-flowing elliptical space with two large, circular serving islands. Comprised of multiple stations for a wide variety of dining options, the servery includes a sushi station, Asian cuisine, American grill, two premium salad bars, deli offerings, a “Taste of the World” station, and a variety of “on demand cooking” service points.

The kitchen is equipped with standard central receiving, preparation and cooking spaces with subset areas including pot washing, catering kitchen operations, baking, and two remote dining room tray accumulation and ware washing operations.

As a result of this successful implementation in Hartford, Connecticut, Crabtree McGrath Associates performed similar services at eight different Aetna facilities from Phoenix, Arizona to multiple locations along the east coast.
